Finely Shredded Carrots with Raisins

Description

This traditional Norwegian side is lightly sweet and juicy, and a nice compliment for savory dishes.

Ingredients

5 Large Carrots (Whole and peeled)
1 1⁄2OunceRaisins
4DropLemon Juice

Instructions

Peel the carrots and finely shred them. Afterwards, sprinkle with lemon juice and mix the raisins in.

As plated in the picture, I served the Finely Shredded Carrots with Raisins as a side with the Norwegian Meatcakes with Mushroom-Onion Gravy and the Easy Baked Kabocha Squash.
